Buttered Mochi

Serves 24

  • 1 Cup Sugar (add 1/2 extra to make it sweeter) - 230 g
  • 5 eggs
  • 1 can Coconut Milk - 14 fl oz - 420 ml
  • 1 can Carnation Milk (Evaporated) {This can be replaced with Water} - 12 fl oz - 360 ml
  • 1/2 Stick of Butter - 4 tsbp
  • 1 tsp Vanilla - 5 ml
  • 1 box Mochiko Flour (Sweet Rice)
  • 1/2 tsp Baking Soda - 3 g
  1. Set Oven to 350
  2. Stir in Wet Ingredients (eggs, milk, butter, vanilla)
  3. Stir in Dry in the same bowl until well combined
  4. Put in greased glass pan (pyrex 13x9)
  5. Place in oven for 35-45 minutes.
