Eggplant Balado Indonesian

Eggplant 'Balado'

4 cloves garlic-minced
1/2 eggplant
1/2 bell pepper (any colour) - minced
1 tsp salt
1 tsp sugar
2 tbsp sweet soy sauce
4 tbsp oil - for teflon pans, for stainless steel pans, more oil required
2 eggs - whisked

Fry the omelette, cut into tiny pieces, set aside.
Fry the eggplant on a low heat for 5 mins, set aside
Heat the oil on a pan
Add in salt and swirl the pan around
Stir-fry the garlic and bell peppers - 2 mins
Add the eggplant and fry for 8 mins.
Sprinkle with the omelette pieces
Serve over rice.
